Las piezas escritas según formas bailables, especialmente los valses, supusieron una parte importante de las obras que el joven Granados interpretaba en su época de pianista de café en Barcelona. Dada la calidad de sus muy elogiadas improvisaciones, es probable que repentizara toda o casi toda la música que int…erpretaba en los cafés en lugar de tocar composiciones terminadas. Por ello es posible que Granados hubiera ofrecido obras del talante de La sirena o Carezza en lugar de piezas tan sofisticadas y de considerable dificultad técnica como las Cartas de amor o los Valses poéticos, en las que su autor logró la estilización del género transformándolas en obras de inspiración propia. Los valses de Granados revelan distintos aspectos de su vinculación al movimiento romántico. Apenas contienen rasgos propios de la temática popular española sino que ponen en evidencia la influencia que sobre su autor ejercieron compositores como Schubert o Chopin. No es posible saber con certeza la fecha de composición de los valses porque las fuentes de las que han sido extraídos, a excepción de Cuatro notas (1888) y Valse de concert, editado en 1914, carecen de este tipo de indicaciones, pero se supone que todos ellos fueron escritos antes de 1900.

Granados es conocido como compositor y pianista, pero se suele olvidar que también fue un pedagogo de prestigio que asumió con esmerada entrega sus responsabilidades como profesor y que consagró, por lo tanto, una parte considerable de su vida a sus alumnos. Fundó en 1901 un centro pedagógico, la Academia Grana…dos, con el propósito de convertirlo en una importante institución educativa, para lo cual no dudó en incorporar en el programa de estudios los últimos métodos de educación musical. En ella se impartían cursos regulares de piano, violín, música de cámara, solfeo, historia de la música, teoría, armonía y composición. Además, con el fin de contribuir a formar al público del futuro, se organizaban numerosos ciclos de conciertos y conferencias. Ejerció de director de la Academia y tuvo como primer subdirector a Domènec Mas i Serracant (1866-1944), cargo que más adelante fue ocupado por su discípulo predilecto, Frank Marshall (1883-1957), quien se responsabilizó de la Academia después de la muerte del fundador y le cambió el nombre por el de Academia Marshall, cuya directora es en la actualidad Alicia de Larrocha.
