"Cet exquis canard a été l'objet de nombreuses et longues controverses () L'histoire de la macreuse mérite que nous nous attardions un peu, car elle présente un intérêt à la fois gastronomique et théologique. A cause des bizarres croyances se rattachant à leur origine, les macreuses passaient pour viandre maigre et par conséquent pouvant être mangées en carême. Ce singulier privilège provenait du fait qu'on les voyait apparaître tout a coup par bandes innombrables à la surface des eaux, et l'amour du merveilleux aidant, on se figura qu'elles naissaient d'algues, de bois pourris ou de coquillages. Le poète Du Bartas s'en est fait l'écho dans sa Création du Monde quand il célèbre ainsi cette étrange bête : "Ainsi le vieil fragment d'une barque se change En des canards volants, ô changement étrange Même corps fut jadis arbre verd, puis vaisseau Naguère champignon et maintenant oyseau !" On comprend aisément que cette croyance était de nature à rassurer les consciences les plus timorées ; aussi fallut-il que le pape Innocent III formulât une défense expresse qui plaçait la chair de la macreuse parmi les viandes défendues. En vain lança-t-il ses foudres prohibitives, car les amateurs continuaient de consommer les macreuses, quand on connut enfin (grâce à Graindorge et aux récits des navigateurs) la vérité sur ces oiseaux, on chercha d'autres raisons pour motiver le maintien des anciens règlements. On insinua que le sang des macreuses était froid, on alla jusqu'à prétendre que leur graisse ressemblait à l'huile de poisson et l'on continue (la coutume durait encore au XIXe siècle) à manger macreuses en carême, en élargissant la dispense à d'autres gibiers aquatiques du genre bernaches, foulques et autres sarcelles qu'on feignait de confondre avec l'espèce autorisée par les conciles".
