This book reveals the substantial inefficiencies observed within the tomato prepackaging industry, and offers practical solutions that could lead to a 36% increase in productivity for those who adopt its advice. With an estimated saving of over 2 million dollars annually in direct labor costs alone, this book is of particular interest to plant owners and managers, particularly those using extensive manual operations. The solutions stem from a study of 14 tomato prepackaging plants. It was found that sorting and packaging operations were the most inefficient areas. Setting up and filling consumer packages with tomatoes accounted for 15% of the total direct labor used in the 14 plants. The most efficient method of filling trays was partial tray filling at a conveyor belt, whereby each operator placed 1 or 2 tomatoes into a mechanically set-up tray moving down a conveyor, enabling a crew of 10 tray-fillers to set up and fill consumer packages of tomatoes an hour, as compared with an average of 2,250 consumer packages an hour, the average production rate found in the 14 plants surveyed. Sorting the tomatoes accounted for 26% of the total direct labor used, and the most efficient method was sorting from 1 conveyor belt onto other conveyor belts, a method which required only 20 man-hours to sort a carload of tomatoes, compared with an average of 34 man-hours found in the 14 plants surveyed.
