Chimico e fisiologo, fu il vero iniziatore della chimica biologica delle proteine. Avendo isolato la parte glutinosa della farina di frumento diede il via a tutti gli studi sulla nutrizione modernamente intesi. Il "Dic. des sciences médicales" indica i Consulti medici del Beccari una sorgente tanto preziosa quanto profonda, ricchissima dei precetti più savi e di osservazioni profonde da essere lette ancor oggi con grande godimento.
