Microbial spoilage of onion is a major cause resulting in post harvest loss every year. In the present study, gamma radiation treatment was used to reduce the pathogenic microflora of Allium cepa L. hence increasing post harvest storage life. The major exported onion variety of Punjab (Desi Red) was selected for the study. The onion bulbs were irradiated at the doses of 0.05, 0.10 and 0.15 kGy at PARAS Foods, Lahore. Then the comparison of microbial populations of onion was made between control and irradiated samples. The impact of radiation dose on weight loss and organoleptic qualities of onion was also evaluated. The results revealed that gamma irradiation significantly affected bioburden, weight loss and organoleptic properties. Onion bulbs irradiated at the dose of 0.15 kGy showed minimum weight loss, reduced microbial load and preservation of organoleptic qualities of onions. 96 pp. Englisch.…

La deterioration microbienne des oignons est l'une des principales causes de pertes apres recolte chaque annee. Dans la presente etude, un traitement par rayonnement gamma a ete utilise pour reduire la microflore pathogene de l'Allium cepa L. et ainsi augmenter la duree de conservation apres recolte. La principale variete d'oignon exportee du Pendjab (Desi Red) a ete selectionnee pour l'etude. Les bulbes d'oignon ont ete irradies a des doses de 0,05, 0,10 et 0,15 kGy chez PARAS Foods, a Lahore. Une comparaison des populations microbiennes des oignons a ensuite ete effectuee entre les echantillons temoins et les echantillons irradies. L'impact de la dose de rayonnement sur la perte de poids et les qualites organoleptiques des oignons a egalement ete evalue. Les resultats ont revele que l'irradiation gamma avait un effet significatif sur la charge microbienne, la perte de poids et les proprietes organoleptiques.
