Auf Romberg folgte Wilhelm Stepp (1882-1964), der aus Nürnberg stammte, 1907 in München promoviert und dann in Straßburg unter Hoffmeister in der Physiologischen Chemie gearbeitet hatte. In seiner 1911 in Giessen vorgelegten Habilitationssch…rift hatte er das Vorhandensein derjenigen Stoffe in der Nahrung von Versuchstieren nachgewiesen, die später die Bezeichnung Vitamine erhalten haben. Stepp war 1922 Direktor der Poliklinik in Gießen, zwei Jahre später Ordinarius und Direktor der Medizinischen Klinik in Jena geworden. 1926 wurde er Nachfolger von Minkowski in Breslau und 1934 übernahm er die Leitung der I. Medizinischen Klinik in München. Bis zum Ende des Zweiten Weltkriegs blieb er im Amt, wurde 1947 mit der kommissarischen Leitung der Würzburger Klinik beauftragt und 1948 emeritiert. Problemen der Ernährung war sein wissenschaftliches Werk gewidmet, in erster Linie der Bedeutung der Vitamine.
