A Very Good, almost Near Fine copy. A sandwich lover's delight, this is a recipe book specializing in sandwich recipes. Also included are recipes for supremes, hors d'oeuvres, garnitures (garnishes), relishes, and flavored butters. Author Arnold Shircliffe provides a brief instructive introduction, "The Art of Sandwich Marking," to give readers some tips and advice on how to make sandwiches. Most of the text comprises sandwich recipes. The following are the titles of the Contents in this book: "Sandwiches," "Butters and Spreads," "A Few Garnitures," "Hors d'oeuvres," "Supremes," "Canapes," "Relishes," "The Makings," and "Garniture Suggestions." Within each section, the recipes are organized alphabetically by name. Example sandwich recipe: "Amandine Sandwich: Chicken, almonds, mayonnaise, bread, lettuce, cress, gherkins; Mix equal amounts of white meat of boiled chicken and chopped blanched almonds and mash to a paste. Season and add enough mayonnaise base No. 3 to make it the right consistency to spread. Spread on thin slices of white bread, press on leaf of lettuce and upper slice. Trim and cut into desired shapes. Garnish plate or platter with clusters of water cress and fanned gherkins. Chicken amandine can be turned into an appetizer by using toast and adding ground capers or ground sour gherkins to paste; or by spreading toast with anchovy butter and the mixture, just enough to give it tang. Serve on rounds, diamonds, or short sticks of toasted bread and decorate with red, brown or green butters.".
