Un des livres de recettes les plus fameux du XIXe…siècle. Il fut souvent réédité et chaque fois complété. Au gré des gouvernements qui se sont succédés, le titre changeait. La 1re édition, de 1806, était intitulée "Le cuisinier Impérial". Le Cuisinier sera Royal sous les diverses restaurations. En 1852, il sera national, pour redevenir impérial en 1854. Les régimes changent, les sauces aussi ! Même l'orthographe du nom de l'auteur subira des modifications. A partir de 1837, Viard s'écrira Viart. Monsieur Viard , "homme de bouche", fut un des rénovateurs de la cuisine. (.) Fouret était un ex-officier de bouche du Roi d'Espagne. A partir de 1831 Délan ajouta plus de 300 articles nouveaux. Il fut également ajoutée une nouvelle notice complète par Grignon de tous les vins connus et une liste des vins par Pierrhugues. Cette édition contient en outre 9 planches gravées au trait représentant l'ordre et la disposition des mets qui doivent former chacun des 3 services dont se compose un dîner régulier de 12 à 60 couverts (Oberlé "Les fastes ." ,168).
