Raymond Oliver was the master of the great Paris restaurant, Le Grand Vefour, and owner of one of the world's finest libraries of rare gastronomic books and manuscripts. For this fascinating volume he has written a sociology of taste. It is not a cookbook, though it contains many recipes, but an illustrated social history of the French at Table, an outline of the centuries and civilizations. As well as being the historian of the classic kitchen, Oliver records for the first time what was eaten by the peasantry, the townsmen, and the 'poor clerks' and scholars like Alcuin and Abelard. Illustrated throughout by colour and b/w plates, classic paintings and food photography.

This fascinating study of the wonderful creations of nature is combined here with fine natural history illustrations taken from M Charles d'Orbigny's 'Dictionnaire Universel d'Histoire Naturelle' as well as Oudart, Pretre, Blanchard, Travies and Baron. Goldsmith drew heavily on the work of earlier naturalists, using Buffon as his main guide, although in fact he had little regard for the elaborate classifications of other scientists. It was his aim ' to excite an interest in the science of natural history by displaying before the public eye its numberless treasures'. This, therefore, is not a scientific work but a highly entertaining account of the habits, subsistence, manners, friendships and hostilities of a wide array of animals, such as the scorpion, the sheep, the cassowary and the sea urchin.
