Many researchers have been interested in the use of essential oils in the food industry. The aim of this work is to study some of the characteristics of clove essential oil. This study shows that this oil is naturally rich in polyphenols and flavonoids. Evaluation of the antioxidant activity of EO by the DPPH test and the reducing power of Iron has shown very powerful reducing, antioxidant and anti-free radical powers associated with interesting anti-inflammatory and antimicrobial activities. The application of this essential oil in the formulation of a food product (salami) gave good acceptability, and to confirm this result we carried out a tasting test to assess the organoleptic quality of this new product. Taken together, the results presented here suggest that clove essential oil is a good potential source of active ingredients for the food and pharmaceutical industries.…

Viele Forscher haben sich für ätherische Öle im Bereich der Lebensmittelverarbeitung interessiert. Ziel dieser Arbeit ist es, einige Eigenschaften des ätherischen Öls der Gewürznelke zu untersuchen. Die vorliegende Studie zeigt einen natürlichen Reichtum dieses Öls an Polyphenolen und Flavonoiden. Die Bewertung der antioxidativen Aktivität von HE durch den DPPH-Test und die Reduktionskraft von Eisen zeigte sehr starke reduktive, antioxidative und antiradikalische Kräfte in Verbindung mit interessanten entzündungshemmenden und antimikrobiellen Aktivitäten. Die Anwendung dieses ätherischen Öls in der Formulierung eines Lebensmittelprodukts (Salami) ergab eine gute Akzeptanz und zur Bestätigung dieses Ergebnisses führten wir einen Verkostungstest durch, um die organoleptische Qualität dieses neuen Produkts zu bewerten. Muitos investigadores têm-se interessado pelos óleos essenciais na indústria alimentar. O objetivo deste trabalho é estudar algumas das características do óleo essencial de cravinho. Este estudo mostra que este óleo é naturalmente rico em polifenóis e flavonóides. A avaliação da atividade antioxidante do OE pelo teste DPPH e o poder redutor do Ferro revelaram poderes redutores, antioxidantes e antirradicais muito potentes associados a interessantes actividades anti-inflamatórias e antimicrobianas. A aplicação deste óleo essencial na formulação de um produto alimentar (salame) deu uma boa aceitabilidade e, para confirmar este resultado, realizámos um teste de degustação para avaliar a qualidade organoléptica deste novo produto.
