The egg mousse recipe, however, is from Mr. A.J. Balcombe, Master of the Worshipful Company of Tin-Plate Workers. The Drapers, the Barbers, and… the Plumbers are also heard from in turn, though the recipe for Filet of Beef Wellington (a bit heavy on the bacon for our taste, though she does note liver pate can be substituted) is from Mrs. Ralph M. Snagge. (Pamela Scrimgeour, 1913-2004, as most of us surely know, married Ralph Mordaunt Snagge (1911-2001), son of Sir Mordaunt Snagge, at London in 1938. And no, none of these people were characters in a Harry Potter novel.) Heavy on the desserts, of course (including Sherry Hedgehog, though lamentably no mention of Spotted Dick.) No, we cannot explain the spellings "Bortsch" or "Spinach Roularde." We also reluctantly conclude Mr. George Vine, Master of the Worshipful Company of Clockmakers, was not pulling Lady Heap's leg when he submitted with a straight face his recipe for "Greek Moussaka a L'Anglaise," entirely lacking bechamel and substituting "young cabbage" for eggplant. First printed by Johann Froben in 1517. Papered spine. (8º) ac8 (c8 blank); 23, (1 blank) leaves. Erasmus' famous pacifist text on the adage "dulce… bellum inexpertis" (war is sweet to those who have not tried it). It was first published in the revised and enlarged edition of "Adages", called "Proverbiorum chiliades" (1515, Basel; Froben) and published separately in 1517, also by Froben. "Bellum" is the first essay where Erasmus speaks of Jews contemporary to him, praises them along with the Turks and the pagans, as well as various peoples of Europe, Asia and Africa for their virtuous living. He writes: "When has the sword, murder, arson, plundering turned conquered people into good Christians?! Openly to be a Turk or a Jew is lesser evil than to pretend to be a Christian. I prefer a real Turk to a false Christian." The printer Simon de Colines (14801546) is most notable for his 1525 "Grandes Heures de Simon de Colines", the illustrator was the same Geoffroy Tory (14801533) who made the design of the woodcut border of this book.
