Com isso o objetivo do trabalho foi realizar um levantamento da literatura existente desses dois frutos, com ênfase em sua produção, armazenamento e a utilização desses no desenvolvimento de novos produtos. São alimentos com pequena vida útil, devido a sua alta perecibilidade, necessitando assim de processos que aumentem a vida de prateleira desses frutos. Inovações tecnológicas que incluem a mangaba foram depositadas como patente, mostrando que a utilização desse fruto está em crescente expansão e na literatura diversos trabalhos foram encontrados utilizando o cajá como matéria-prima para elaboração de novos produtos.
