I am sure by now you have all been confused by the use of these two words. You are not alone! We can't even get it straight. We will tell you we raise Buffalo, but we sell Bison meat. Recently the Canadian Bison Association published an article on this very subject. It seems that the entire industry is trying to decide which one is correct. What they decided was that both are correct. In fact the words are virtually interchangeable. Really, if you do some simple research, you will find that the North American Buffalo is not a true Buffalo. What we raise here in North America is a Bison and belongs to the Bovine family of mammals same as domestic cattle. Throughout history we have come to use the name Buffalo to such an extent that it is truly more common and recognized than the name Bison. Today the two are used interchangeably. Bison and Buffalo used as if they were the same word. I understand that it will seem a bit confusing to you at first, but soon you will come to believe as we do that.
