Lasciata la carriera forense, si dedicò interamente agli studi scientifici, attratto in particolare dalle ricerche dei chimi…ci francesi. Nel 1807 fu nominato professore di chimica del Liceo di Scienze Fisiche e Naturali di Firenze. Passò in seguito alla Scuola di Farmacia presso l'Ospedale di S. Maria Nuova, dove insegnò a lungo. Fu Commissario generale della Magona e Miniere della Toscana. Propose inoltre la perforazione dei terreni boraciferi nella zona di Larderello per attivare nuovi soffioni. I risultati ottenuti e i metodi seguiti nelle ricerche sui concimi sono tali da occupare un posto di notevole importanza nella storia della scienza agraria in Italia. L'opera del Gazzeri fu largamente citata ed utilizzata da Pictet, Gasparin, Pierre, ma specialmente da Boussingault. (Cfr. Cantù, It. scientifica, 232-33.
