En cambio, el sabor y la naturaleza refrescante son las principales ventajas de las bebidas no lácteas, especialmente los zumos de frutas. Se revisan las similitudes fenotípicas y genotípicas entre los probióticos lácteos y no lácteos, junto con la dependencia de la matriz de la viabilidad celular y la funcionalidad celular. Las matrices alimentarias heterogéneas de los portadores de alimentos no lácteos son las principales limitaciones para la supervivencia de los probióticos, mientras que las cepas probióticas procedentes de fuentes no lácteas son satisfactorias. Las propiedades tecnológicas y funcionales, además de la viabilidad de los probióticos utilizados en productos fermentados de origen no lácteo, son sumamente importantes para obtener una ventaja competitiva en el mercado mundial.
