Andre Simon was the founder and head of the Wine and Food Society. He was said to have one of the most sensitive and widely respected palates in the world as well as a collection of the best recipes in any language. Crosby Gaige, Chairman of the New York Wine and Food Society, has made a thorough revision of this aristocrat of cook books, using American weights and measures and confining the menus to foods available in American markets. There are 52 menus for two kinds of occasions: small informal luncheons, and the more important meals, including a banquet of forty. To Monsieur Simon's discussion on French wines, a section of American wines has been added, written for this 1948 edition by Frank Schoonmaker.
