Synopsis

Alongside the splendours of tsarist Russia - its art, architecture and literature - stands its cuisine, a marvellous, little-known part of Russian heritage. Based on favourite family recipes and passed down through generations of the Russian émigré community in New York City, The Russian Heritage Cookbook restores an entire culinary heritage - one which previously existed only in the memories of the cooks themselves, or in the form of yellowing scraps of paper.

Restoration of an entire culinary heritage.
Based on the favorite family recipes passed down through aristocratic households in both the emigration and Russia, this book represents the restoration of an entire culinary heritage which existed only in the form of yellowing scraps of paper and recipes passed on verbally through the generations. The Russian Heritage Cookbook brings together the best of these classic recipes, tested by both Russian and American cooks, and adapted for the modern kitchen. Over 400 recipes are included, covering everything from hors d’oeuvres to main dishes to desserts to beverages. Potato Pirozhki with Mushroom Filling, Carp à la Russe, and Almond Cake with Apricot-Wine Filling are just a few of the delicious and sumptuous recipes to be found here, accompanied by usefulintroductions which provide a history of Russian cusine.

Lynn Visson, scholar, interpreter and writer, has published many books, including: The Moscow Gourmet, Sergei Esenin: Poet of the Crossroads, and, most recently, Wedded Strangers: the Challenges of Russian-American Marriages. Ms. Visson, who also works with the United Nations, is a renown simultaneous translator of French, Russian and English and has worked with many famous world figures.
