About the Author

John Coletta is the executive chef and managing partner of Chicago s Quartino Ristorante and Wine Bar. Under Coletta s leadership, Quartino also earned the Ospitalita Italiana seal, which recognizes restaurants abroad that promote the traditions of Italian food culture.
