The author writing in 1931 states: " it may at times be found that some of the most characteristic recipes are not included in the menus of restaurants. They has been a tendency in recent years to forget these delightful old dishes, but they are still the best, and the tourist who, instructed by this book, asks of the dishes of his own selection, will not only ensure delight for himself, but will bring back to the French restaurant tour the realization that in her wonderful old recipes France has a treasure that she should jealously preserve. the Torah should remember also that the genuine French chef is really proud of his profession and will welcome any interest shown by having inquiries made of him or her."
