Mrs. E. E. Kellogg, A.M. Science in the Kitchen: A Scientific Treatise on Food Substances and Their Dietetic Properties, Together with a Practical Explanation of the Principles of Healthful Cookery, and a Large Number of Original, Palatable, and Wholesome Recipes. Modern Medicine Publishing Co., Chicago, 1893. Publisher: Modern Medicine Publishing Co., Chicago, Ill. 9 × 6½ in. 581 pp., followed by 15 pages for handwritten recipes, of which 2 are filled and the remainder blank English Good The first edition of Ella Eaton Kellogg's health reform cookbook, written while she was supervising the cooking school at the Battle Creek Sanitarium and overseeing the daily cuisine for an institution housing between 500 and 700 patients at a time. Ella was the wife of John Harvey Kellogg, the physician behind the sanitarium and a central figure in the Seventh-day Adventist health movement. The book is built around the idea that what you eat directly affects your blood, your muscles, your brain, and your overall health, and that most people simply eat whatever is convenient without giving any thought to its nutritional value. It covers food science, digestion, proper food combinations, and a large collection of original recipes. As the preface notes, hundreds of her recipes had already been copied into other cookbooks and journals before this book was even published. Marbled page edges. Bound in ivory cloth with ornate black titles to the front board and titles to the spine. Good condition. The front hinge has split along the bottom couple of inches, with wear to the interior hinges, though the book remains intact, plus some black ink stains to the spine. Bumped and worn corners and general shelf wear. Some chipping to page edges, most notably to the last blank pages. Minor foxing and smudging in places throughout. Ivory cloth with ornate front cover. 9 × 6½ in. 581 pp., followed by 15 pages for handwritten recipes, of which 2 are filled and the remainder blank English Good.…
