Paperback. Condition: New. Print on Demand. This book provides a comprehensive guide to the study of larger fungi with a special emphasis on their appeal as food sources, and their potential health benefits and risks. Although many books on the subject focus on describing species, this book focuses on helping readers understand the identification and preparation of fungi, approaching the subject from the perspective of a naturalist, an amateur who enjoys identifying fungi, and a cook who is curious about the possibilities of fungus-based cuisine. The author provides an overview of the larger fungi, the identification of fungi by species, their ecology, their role as a food source, their nutritional and medical properties, and their cultivation. This book is a reproduction of an important historical work, digitally reconstructed using state-of-the-art technology to preserve the original format. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in the book. print-on-demand item. Seller Inventory # 9781330352380_0
