All but one of the illustrations feature stereotypical African American imagery common to the time, some respectful, others not so. Introductioon by the prominent physician and writer S. Weir Mitchell, who extols the skills of the southern African-American cooks of the Old South. A sample of some of the recipes includes crab gumbo, crawfish bisque, Aunt Anne's delicious cornbread, hopping John, Jumballaya a la Creole, kidney stew, molasses cake, New Orleans veal with oysters, New Orleans way to cook snipe, okra gumbo, okra hibiscus, oyster and peanut soup, porcupine pudding, praline cocoanut, stewed tongue, sweet potato pudding, terrapin stew, etc. Fine condition, an absolutely pristine copy, no signs of use, no owner names.
