In the early 1950s, he started working as a waiter in a cafeteria and then as a waiter and busboy in a hotel. In 1958, he became the manager of a restaurant in San Diego and then the manager of a buffet restaurant in Las Vegas. In 1969, he opened the first restaurant in the United States that was owned and operated by a Hispanic American, El Pollo Loco.
