In the middle half of the 20th century, some food processing companies started to promote their products by using a fictious female spokeswoman. Without doubt, one of the most successful of those was Betty Crocker, the "spokeswoman" for General Mills, Inc. - continuing into today. Swift & Company created "Mama" Martha Logan as their spokeswoman. Beth Bailey McLean (1892-1976) was Swift's Director of Home Economics during the Martha Logan roll-out, and she became known to the public as Martha Logan because her photograph was used as Martha Logan's and she appeared as Martha Logan on some radio and television shows. McLean's Assistant Director, Thora Hegstad Campbell (1915-2010), was also used to portray Martha Logan, appearing in New York television shows as Martha. Thus two actual food preparation experts (one brunette, one blond) became known as Swift & Company's single fictitious spokeswoman. Regardless of how or why, these two had their cooking expertise confirmed in the public's mind so they collaborated to produce top-selling cookbooks through the 1950s. This title 1st appeared in paperback in 1952. Mass Market Paperback has orange front cover with orange lettering & highlights on rear cover.
