First edition of this very scarce candy making work detailing the processes for manufacturing the beloved French coated candies, D…ragee, which many of us still eating a variation as M & M's. Other forms included coated almonds, decorative metallic balls, Dragees with gum drop centers, nougat centers, and many others. Grillon (b. 1865) was as an award-winning candy maker and foreman at a candy factory in New York who had immigrated from Beaugeney, France in 1907, and winner of the Culinary Exhibition Gold Medal in 1899 at Toulouse. The author not only includes many recipes, but also the necessary specialized tools, equipment, cooking times, molds, and even includes recipes for medicated gum, and confectionary products.
