Bharti owns a small, immaculately clean Indian provisions store in downtown Kitchener, Ont. In the back of the store on weekday evenings, Bharti teaches classes in Indian Vegetarian cooking. The small class watches over Bharti's shoulder as she cooks everything on two plug-in hot plates. Then they get to eat and enjoy the light and utterly delightful, satisfying food. Most of the recipes in this book are from the western provinces of Gujarat, where Bharti's family comes from, where the food is fragrantly spiced rather than searingly hot. Bharti's grandfather was skilled in using foods to heal - the most immediate, daily way in which we can provide for the nurturing and care of ourselves and others.
