Stacy is the co-author of Foraging Texas and has been wild-harvesting with her husband Eric Knight for over a decade. She loves creating new, simple and healthy recipes with wild-harvested ingredients that showcase the wild and unique flavors around us. She is also the co-owner of Local Leaf LLC, where she makes a wild-harvested Yaupon Matcha powder that is available for sale online through their website www.local-leaf.com as well as all 7 Austin-area Whole Foods stores. She also wild-harvests other items for local restaurants and restaurant groups around Austin, TX. She loves teaching others about wild edible plants through classes offered at the Lady Bird Johnson Wildflower Center in Austin, TX and the Fort Worth Botanical Gardens in Fort Worth Texas. Her mission is to get people outside and excited to incorporate wild foods into their daily lives. She hopes to inspire people to get outside and eat the weeds.
