ERIN SCHIESTEL studied pastry in Toronto at George Brown College and stagier at Craft Restaurant in New York City. In 2011, she received the Ontario Hostelry Institute’s Top 30 Under 30 award. She was a key member in opening the three Earth to Table: Bread Bar restaurants in Hamilton and Guelph, Ontario and oversees all pastry production and custom cakes at one of the Hamilton locations. When she’s not busy baking treats, you’ll find Erin and her dog Cricket drinking coffee around Hamilton or hiking the Bruce Trail.
