Ellen Tout is a writer and author, specialising in sustainability and environmental topics. As Eco Living Editor at Psychologies magazine, she inspired readers to take practical steps to be kinder to the planet and championed honest and accessible conversations around the climate crisis.
Raised in a vegetarian household, Ellen is a keen home cook and became vegan in 2016 for ethical and environmental reasons. She is passionate about reducing food waste and realised there was a lack of vegan books aimed at zero-waste cooking. Her creative recipes and tips show you how to compleat – making use of every leftover, scrap, offcut and glut of fruits, vegetables and herbs in delicious, nutritious and inspiring ways.
Ellen lives in Kent with her girlfriend and rescue dog. As well as cooking, she loves to be outdoors, growing vegetables, gardening and walking. She is a Coastal Guardian with Kent Wildlife Trust and has worked with the environmental charities TRAID, The Natural History Consortium and her local Friends of the Earth group.
