J.S. Kohout's professional obsessions began at age 13. It started with bread from the family bakery and a magic set from his grandparents. The bread inspired sandwiches and a love of food. The tricks inspired him and a friend to start a magic magazine. The magic magazine lead to work as a newspaper reporter. But it was bartending that paid the bills while he earned a BFA in Writing.
The degree brought him to LA, where he spent ten years doing work both great and small in the film and TV industry. Hollywood and the restaurant industry both offered an interesting array of opportunities. Eventually, a Hollywood Hills dishwashing job became a head baker position. This lead to a decade of baking, serving, and managing restaurants across three states.
Today he works out of his apartment in South Boston. There he runs an "apocalyptic restaurant" and writes stories both true and imagined about the intersection of people and food.
