Breakfast and Supper was our main meal at home when I was a kid. Dinner was leftovers from breakfast most of the time or Mama would open a can of something that was easy to fix without building a fire in the cook stove. I don’t remember ever sitting down and eating dinner except on Thanksgiving and Christmas and sometimes on Sunday. Supper was normally pinto beans, cornbread, fried potatoes and maybe some corn or okra that Mama and Grandma had canned in the summer. Breakfast was biscuits and gravy, fatback bacon, and jelly and sometimes blackberries. If Mama had milk, we had flour gravy, if not she made meal gravy with water. A real treat was chocolate gravy over biscuits. Us kids didn’t care for the fatback bacon because it was real salty from being cured in salt. Every once in a while, Mama would kill a chicken and we would have fried chicken for breakfast. But most of the time chickens were stewed or made into chicken and dumplings for supper to make it go further. Fried or scrambled eggs were rare because we didn’t have enough chickens for that many eggs and eggs, we got from chickens were used to cook with.
