Susan Pridmore is the author of the Simply Vegetarian Cookbook, and the creator, recipe developer, writer, and photographer for the food blog The Wimpy Vegetarian. She went mostly vegetarian three years after marrying a mostly carnivore, throwing dinnertime into instant chaos, as she tried to make everyone at the table happy. Over time, she drew heavily on her culinary training to create easy vegetarian dishes that pack a lot of flavor into a handful of simple ingredients that can be easily adjusted to include meat or fish. After living for many years in the San Francisco area, she and her husband now make their home on the shores of Lake Tahoe. You can find her hiking mountain trails and kayaking in the summer and skiing nearby slopes in the winter.
