Carol D’Anca was born and raised in the Italian tradition in a small town in Wisconsin where gardening and home cooked meals in the Neapolitan tradition were common. She became aware of the vast differences in dietary choices in the U.S. early in life, initiating a life-long pursuit of the study of nutrition as it relates to disease.
An honors graduate at the University of WI, she earned a Master of Clinical Nutrition Degree at Rosalind Franklin University of Health and Science/The Chicago Medical School. After completing her internship she became a licensed dietician/nutritionist, practitioner, author, public speaker, and founder of the Academy of Plant Based Nutrition and Cooking.
Her mission is to raise nutritional awareness, inspire dietary change and improve the health of the nation.
