Inspired by her husband’s dedication to improve his health through lifestyle and diet modifications, Dr. Cathi Misquitta decided to record her efforts in the kitchen to provide a roadmap for others to improve their health. The result was a collection of over 100 ultra low-fat, plant-based recipes that vary in flavors, ingredients, and countries of origin. Her hope is that readers will make a positive impact on both their health and the environment.
Dr. Misquitta earned her Pharm.D. from the University of the Pacific, School of Pharmacy. After graduation, she completed a pharmacy practice residency at the University of California Davis Medical Center. She has been recognized as a fellow of the California Society of Health-Systems Pharmacists, and she is a Board Certified Pharmacotherapeutic Specialist. She serves as adjunct faculty for both the University of the Pacific and Touro University Schools of Pharmacy.
When she is not practicing pharmacy, Dr. Misquitta enjoys spending time outdoors with her family and varies her activities as the seasons change. Winter brings snowboarding, cross-country, and downhill skiing. In warmer months, you can find her kayaking, cycling, or hiking.
