"Caroline's No Nightshade Kitchen: Arthritis Diet" has given me the opportunity to share my story about nightshades and arthritis, and to explain my fourteen year journey. I never dreamed when I was enjoying all those hot spicy foods, most often rich with peppers, tomatoes, white potatoes, and eggplant, that I would be telling you about the toxic reaction that some people have when consuming nightshades. Myself included. The pain was severe and could not be controlled with traditional medicine. I was devastated and felt hopeless. Then a friend asked me if I knew anything about nightshades. Her simple question changed my life. I tried totally eliminating nightshades from my diet, and in a few days, the pain was completely gone. If I stay away from nightshades, I live a pain free life. How can this be? There's not a scientific answer for this question, but I, and many, many other people know that when we eat certain foods, pain, swelling, redness, and inflammation can appear with in minutes to a couple hours. I wish there were scientific studies to confirm this phenomenon, and someday I hope there will be. I hope my book promotes more research, information, and truly helps the millions who suffer from arthritis and other inflammatory diseases. This is my hope.

On a lighter side, I love to cook and create savory, interesting recipes. My cookbook not only provides foods that are nightshade free (and often gluten and lactose free as well), but these are pretty darn good recipes!
