My name is Maria Phyllis Chavez. Born and raised in New Mexico. I wrote this book, "Recipes from New Mexico, Back to Simplicity from the Land of Enchantment, by Maria Phyllis, because of my love for New Mexico cuisine. It appears that most people who taste our food also become very fond of it since it is distinct in many ways. Mainly because of the chili's grown in New Mexico, would be the greatest reason of all. Step by step instructions, as even a beginner would be able to cook these recipes. Also, there is a picture to each recipe which is very rare in cookbooks. And most of all, the most important and basic recipes that are used throughout New Mexico and now starting to use around the world, are in the book.
