I have to say I completely agree with this sentence written by Alvaro Cunqueiro in his book “Cocina Gallega” published by Everest in 1973. I read this book in my youth, when I started to cook with my mother’s help. My mother is responsible for my eagerness to enter the kitchen and to cook for my friends and family. She is also the reason that I love the challenge of opening a fridge, selecting ingredients and using my imagination to prepare a marvelous dish like the one described above by the great gourmet.

My name is Alfonso López, I am from Galicia and I am very proud of it. This is why the base of my cooking comes from these traditional recipes from this wonderful part of Spain, where the quality of ingredients and devotion to them is so important. I like to cook traditional recipes from different places. Living in a big city allows me to try different world cuisines and bring new scents and flavors into my kitchen. At the end of the day, my cooking is the traditional cooking with a few new touches.
