I received a Bachelor of Science Degree in Chemistry from Drexel University and
a Doctorate in Physical Chemistry from Drexel University. From 1971 to 1974, I was a
Research Food Scientist at Lehi The Farmer’s Dairy in Allentown, Pennsylvania. At Lehi, I
researched the recovery of cottage cheese whey by ultrafiltration (fractionation), reverse
osmosis, fermentation, and immobilized enzyme conversion systems. I further researched the
utilization of the cottage cheese whey into frozen and cultured dairy products. From 1974 to
1980, I was a Group Leader at General Foods Corporation in Tarrytown, New York. I was in
charge of product and process development efforts for products such as Pop Rocks® carbonated
candy and Increda-Bubble® carbonated bubble gum. From 1980 to 1985, I was Manager of
Product Development with Ragú Foods, Inc., in Shelton, Connecticut, where I developed and
managed timetables for multiple projects related to tomato sauces. From 1985 to 2002, I was
Director of Food Product Development with Arthur D. Little, Inc./TIAX, LLC, Cambridge,
Massachusetts. There, I led all food and beverage product and process development consulting
and provided direction and leadership to ensure realization of product development objectives for
external clients and internal key business plans. I successfully developed products, such as, Slim
Fast® dry-mix and ready-to-drink meal replacements; ice cream, mayonnaise, and butter-like
spread products containing Olestra® fat substitutes; and frozen yogurt products that can be
scooped with a plastic spoon directly from the consumer’s freezer. From 2005 to 2007, I was
Business Development Director of DuPont Safety Resources for E.I. DuPont de Nemours and
Company in Wilmington, Delaware. From 2007 to 2011, was Director of Food Science at
MooBella, Inc., Taunton, Massachusetts, a company that provides vending machines for fresh
ice cream. At MooBella, I formulated, sensory tested, scaled up and supervised the
manufacturing of ice cream mixes and flavors that supply MooBella ice cream vending
machines.
After leaving MooBella in October 2011, I founded my own consulting company,
Dr. M.J. Rudolph Consulting, LLC. My company specializes in providing advice on new food
products and process development to companies desiring to enter the marketplace with unique
food and beverage products. My company provides technology assessments for private and
public companies.
Thus, since 1971, I have had 50 years of product development experience
within the food and beverage industry, which includes developing products from the bench top to
pilot-plant scale-up and commercialization, product development, product formulation, product
manufacturing and product engineering.
