Pam Williams

PAM WILLIAMS has been involved in the chocolate industry since 1981 when she created her first chocolate endeavor, the chocolate shop: au Chocolat. In 1984 Pam wrote the cookbook Oh Truffles which went on to be a Canadian Best Selling book.

In 2003, she founded Ecole Chocolat Professional School of Chocolate Arts www.ecolechocolat.com which delivers high quality educational programs to students all over the world. The Ecole Chocolat program curriculum offers what Pam considers to be the foundation for any successful chocolatier or chocolate maker—a complete understanding of chocolate chemistry and flavor analysis, recipe development, production techniques/equipment and business issues.

As well as leading Ecole Chocolat, in Pam created chocomap.com to celebrate the chocolate industry with a map directory of over 3000+ chocolate shops.

Pam received the Fine Chocolate Industry Association’s Recognition of Excellence in Service to the Industry.

In 2012 Ecole Chocolat first published the book: Raising the Bar: The Future of Fine Chocolate. The authors are Pam Williams and Jim Eber. The kindle and paperback are the Third edition of the book as Pam is dedicated to keeping the future of chocolate updated.

In her free time, Pam is passionately working on the Heirloom Cacao Preservation Fund (HCP) www.hcpcacao.org as Past President of the HCP Board of Directors Pam and her husband, Daryl, live in Vancouver, BC.
