Morton Satin

Morton Satin (El Dorado Hills, CA, USA) is currently the Vice-President, Science and Research at the Salt Institute. He recently retired as the Director of the United Nations Food and Agriculture Organization's Global Agribusiness Program. A molecular biologist, he is the author of Death in the Pot - The Impact of Food Poisoning on History; Coffee Talk - The Stimulating Story of the World's Most Popular Brew; Food Alert! - The Ultimate Sourcebook for Food Safety; Food Irradiation - A Guidebook; and the first four chapters of the renowned Encyclopedia of Food Safety; in addition to hundreds of other articles, technical papers and reviews. He has been responsible for several groundbreaking international nutritional developments such as the first fiber-supplemented foods (1975), the first supplementation of foods with folic acid (1976), the original gluten-free products formulations (1987), and is author of the patent for shelf-stable coconut water (1996), which he transferred freely to the United Nations Food and Agriculture Organization on condition that they make it available without licensing fees to all developing countries. In 2014, the coconut water market exceeded $1 billion!
