"When someone asks me to describe my diet, the inevitable next question is, “So...What DO you Eat?” It’s not hard to rattle off a list of my staples, and they sound pretty much like everyone’s shopping list:
• Fruits • Vegetables • Meats • Seeds
It’s the omissions that have them flummoxed;
NO: • Sugars • Grains • Nuts • Dairy • Starchy Vegetables
Essentially, I’ve eliminated anything that causes inflammation, or an allergic reaction in my own cooking. Allergies are on the rise, and learning to prepare foods that those with allergies are able to eat can be fun and enjoyable. When you feel good on your diet, it’s all the incentive you need to keep it up. Eating pure foods also has significant health benefits for everyone.
When I refer to “Pure Foods” I mean consuming a simple diet of freshly prepared single ingredient foods that satisfy the bodies needs, without including foods your body reacts to. In some cases metal allergies can cause further challenges. If you are reacting to nickel, I’ve included suggestions for “Nickel-free Cooking” using metal-free cookware and utensils. I’ve also included references and a list of foods to be aware of that contain nickel in the appendix." —Amy Thurber
“I’ve been looking for a cookbook that heals my gut. Amy’s What DO You Eat does the hard work of eliminating all the foods I love/hate while enticing one with full flavored satisfying foods that don’t leave me wanting for a thing!”
—Didi Emmons Author of Vegetarian Planet & Wild Flavors
"A great set of delicious recipes and helpful techniques to aid allergy sufferers and anyone who wants to improve their health with food."
— Marc A DeRego “Chef Owner, Smoke & Pickles Catering"
