The classic reference book for anyone considering running a restaurant. Fascinating for both its historic and practical value. This is an enormous tome. The red leather boards have some stains and shelf wear, but the interior looks great. The binding is quite strong and the text is clean and tight. Original owner's signature on the inside front cover.
