From the Author
Do you feel overwhelmed every fourth Thursday of November? There's no reason why you shouldn't be. When was the last time you had a twenty-five pound bird in your oven? When was the last time you made a meal that traditionally required eight or nine side dishes, all of which had to arrive hot on the table at the same time? When was the last time you had so many people to feed? Right--364 days ago at your last Thanksgiving, and you may have forgotten what you learned then. Thanksgiving 101 is for every kind of cook. Whether its you are a novce or a seasoned cook, you will find something to learn from my years of experience. Every year, I travel around the country teaching my "Thanksgiving 101" cooking classes, so I estimate that I must have made this wonderful holiday meal about 300 times for thousands of students. That's a lot of turkey under my belt--literally. When choosing and creating recipes, I worked very hard to have an assortment to fit every kind of Thanksgiving menu. Many of our Thanksgiving dishes are based on convenience foods, and I don't turn my nose up at sparkling Jell-O salads and candied yams with marsmallows. On the other hand, for more "from-scratch" cooks, I offer a jellied Cranberry Waldorf Salad with fresh berries and walnuts and sauteed Green Beans with Portobello Mushrooms and Bacon. I give you honest appraisals of all the countless turkey roasting methods out there (I've done them all), including my favorite Perfect Roast Turkey, which uses the open pan method and a foil wrap to protect the breast from overcooking. You'll find lots of suggestions on how to organize the meal (truly the secret of a successful Thanksgiving feast) and tidbits of history of why we eat what we eat to celebrate the our forefathers' fortitude. Exclusively for Look at Thanksgiving 101 as your insurance policy to a hassle-free holiday.
