Print on Demand. This book delves into the complex interactions between invertase, a type of enzyme, and sucrose. It offers a detailed examination of the hydrolysis process, the breaking down of sucrose by invertase, and the unique kinetic characteristics exhibited by this reaction. The author presents their findings on the initial velocity of hydrolysis, highlighting its surprising constancy and occasional increase during the early stages. They also analyze the intriguing observation that the presence of glucose or invert sugar significantly influences the reaction rate, a phenomenon that challenges traditional assumptions. Through a series of meticulous experiments, the author unveils the complex interplay of consecutive reactions that govern invertase action, thereby providing new insights into the intricate mechanisms of enzymatic reactions. This book is a reproduction of an important historical work, digitally reconstructed using state-of-the-art technology to preserve the original format. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in the book.…

Product Description
In determining the activity of hydrolytic enzymes, like invertase, the question arises as to what extent the velocity of the hydrolysis of the substrate can be taken as a measure of the activity or, in other words, how much of the enzyme pres ent in'the solution is in the active condition.
