Synopsis

Increasing interest in the use of numerical microbiological criteria for foods has often been accompanied by the supposition that the derived data are absolute and that variability is small. In spite of endeavours by some international bodies to stress the need for standardization of methods and the use of sampling plans, a situation still exists wherein an assumption is made that microbiological analyses yield highly reproducible data. This book starts with an assumption of no statistical knowledge by the reader. It discusses the meaning of variability and then considers the nature of certain statistical distributions and their relevance to the distribution of microorganisms in foods and other materials. Methods are described whereby the nature of the distribution can be assessed and hence valuable information can be obtained regarding the state and source of the organisms. This leads naturally into a consideration of sampling theory and an assessment of sampling regimes in relation to the interpretation of microbiological data. The causes of analytical error are then considered for both traditional and novel methods of analysis, and an assessment is made of the use of microbiological data in food control, especially in relation to interpretation of microbiological criteria. The book is widely referenced and the concepts are illustrated by many worked examples. It will be a valuable aid to practising microbiologists in the food, beverage and associated industries, as well as for students reading food microbiology at undergraduate and postgraduate levels.

About the Author

Prof. Basil Jarvis has held various academic and senior industrial research positions throughout his career as a food microbiologist. His work has taken him to many countries outside the UK including the USA, Scandinavia and South Africa. He has published widely on food quality and safety, including inhibition of microbes in food systems, microbial toxins in foods, rapid microbiological methods, and statistical aspects of food microbiology. For almost 40 years he has been a Visiting Professor at the University of Reading and for 20 years was an Honorary Professor of Life Sciences at the University of Surrey, where he established a WHO-sponsored graduate course in Food Microbiology for medical and veterinary practitioners.

He has served on numerous official advisory groups, including the statistics group of the AOAC Presidential Taskforce on ‘Best Practices in Microbiological Methods’. He is also a member of the ISO working group on Microbiological Statistics. He is a Past President and Honorary Member of the Society for Applied Microbiology, a Fellow of the Royal Society of Biology and a Fellow of the Institute for Food Science and Technology. Although now retired, he retains his interests in teaching students and considers statistics to be a relaxing hobby, especially when accompanied by a glass of fine wine!

Our shipping charge only covers international postage. Import duties vary widely by country and are additional. We thoroughly clean all books that we offer for sale and do all basic book-repairs ourselves. Basic repairs include repairing slanted bindings, applying additional glue to hinges that have become excessively loose, hinge-tape repairs for damaged hinges, minor binding split repairs, gluing small tears in exterior of covers, removal (as much as possible) of black marker marks to covers of ex-library books, removal of smaller non-permanent stickers, straightening of minor bowing to covers or spine, and applying jacket protectors to books with torn or fragile jackets or for especially pristine or collectible books. We do not do major binding repairs, and any un-repairable binding splits or general weakness in binding will be noted. Any significant repairs such as a hinge-tape repair will also be noted. These repairs do not usually change the underlying condition grade, but do make the book more presentable. Some books are beyond help and will be listed as "Fair/Acceptable" or "Poor". Our books are graded conservatively with library books never graded above "Good" and used books rarely graded above "Very Good". Below is a list of the condition grades we use, in descending order: New/Fine Like New/Near Fine Very Good++ Very Good+ Very Good Minus Good++ Good+ Good Fair-to-Good Fair/Acceptable Poor Very Poor We try to grade accurately, but condition grades are often subjective, so please consider also any condition notes and book photos (when available) before placing an order. If you are a consumer you can withdraw from the contract in accordance with the following. Consumer means any natural person who is acting for purposes which are outside his trade, business, craft or profession.

Statutory right to withdraw

You have the right to withdraw from this contract within 14 days without giving any reason.

The withdrawal period will expire after 14 days from the day on which you acquire, or a third party other than the carrier and indicated by you acquires, physical possession of the last good or the last lot or piece.

To exercise the right of withdrawal, electronically fill in and submit a clear statement on our website, under "My Purchases" in "My Account". We will communicate to you an acknowledgement of receipt of such a withdrawal on a durable medium (e.g. by e-mail) without delay.

To meet the withdrawal deadline, it is sufficient for you to send your communication concerning your exercise of the right of withdrawal before the withdrawal period has expired.

Effects of withdrawal

If you withdraw from this contract, we will reimburse to you all payments received from you, including the costs of delivery (except for the supplementary costs arising if you chose a type of delivery other than the least expensive type of standard delivery offered by us).

We may make a deduction from the reimbursement for loss in value of any goods supplied, if the loss is the result of unnecessary handling by you.

We will make the reimbursement without undue delay, and not later than 14 days after the day on which we are informed about your decision to withdraw from this contract.

We will make the reimbursement using the same means of payment as you used for the initial transaction, unless you have expressly agreed otherwise; in any event, you will not incur any fees as a result of such reimbursement.

We may withhold reimbursement until we have received the goods back, or you have supplied evidence of having sent back the goods, whichever is the earliest.

You shall send back the goods or hand them over to Salish Sea Books, Bellingham, Washington, U.S.A., without undue delay and in any event not later than 14 days from the day on which you communicate your withdrawal from this contract to us. The deadline is met if you send back the goods before the period of 14 days has expired. You will have to bear the direct cost of returning the goods. You are only liable for any diminished value of the goods resulting from the handling other than what is necessary to establish the nature, characteristics and functioning of the goods.

Exceptions to the right of withdrawal

The right of withdrawal does not apply to:

The delivery of newspapers, journals or magazines with the exception of subscription contracts; and
The supply of digital content which is not supplied on a tangible medium (e.g. on a CD or DVD) if you accepted when you placed your order that we could start to deliver it, and that you could not withdraw once delivery had started.

SHIPPING POLICY: For Domestic orders, we ship through the US Post Office and orders can be tracked at www.usps.com. Orders priced at $250 and above will require a signature upon delivery.

For International orders, we ship exclusively through UPS using their Worldwide Expedited shipping service. This is highly reliable courier service with most orders delivered within 1 to 2 weeks. Shipments can be tracked at www.ups.com.

For international shipments, it is important to provide a valid phone number so that you can be contacted by UPS (if necessary) to make final delivery arrangements. Our shipping price is for postage only. Import duties vary widely by country and are the responsibility of the customer.

RETURNS POLICY: We offer an unconditional 30 day return policy: books can be returned for any reason if sent back within 30 days of the date they are received. The buyer is responsible for shipping charges unless the book was mis-described, in which case we will be responsible for all shipping charges.
