If your kitchen were Wall Street, shortbread would be a hot tip because your small investment of time pays big dividends. Cookies don't get any simpler than this--just butter, sugar, flour. In literally no time, you can have a royal, homemade treat. (Slightly overbake the shortbread and it will be dunkable, rather like biscotti but much quicker to make.) Easy luxury is the theme of this beautifully illustrated little book.
Try the hearty, toffee-flavored Pear Oatmeal Shortbread and the delicate, celadon Green Tea Shortbread. The lip-smacking Almond Shortbread Bars with Burnt Sugar Icing won my editors' hearts. But the White Chocolate Black Raspberry Shortbread may be my personal favorite.
There's also a savory shortbread chapter for hors d'oeuvres. They're unique, easy to make and serve (make them ahead of time, serve them at room temperature, and enjoy your own party for a change). Try the Pecorino Shortbread, dusted with paprika and attractive when sliced. The White Cheddar Bacon Crackers and Roasted Garlic Asiago Thins vanish without a crumb left behind, and the intriguing Many flavored Shortbread Bites were inspired by a modest lunch in Paris years ago (a loaf of bread, a glass of wine and some goat cheese rolled in herbs...).
The pleasures in life are often the simplest and cooking can be creative nourishment for the soul. Luxe shortbread, the minimalist in the kitchen, pays back with big flavor. And homemade is best.
