Item description from seller

A large printed menu, approx. 25 x 38 cm., comprising a large illustration by W. Dalmondi, captioned at foot and with the menu at left; minor creasing and soiling, else very good. Reginald Farrar was a government inspector sent to China to investigate the export of pork: exported meat derived from two sources (Hankow and Harbin), and there had been a proposal to extend the market to Shanghai. Farrar investigated the quality of the export, vouching for its high quality in his official 'Reports to the Local Government Board . . . on inquiries in China and Siberia respecting pork and bacon exported to England' (1911). The Savage Club menu wittily depicts Farrer in Chinese costume sending pigs off to waiting ships.
