Les probiotiques sont des ingr�dients alimentaires microbiens vivants qui ont des effets b�n�fiques sur la consommation. La pr�sente �tude a recherch� dans des �chantillons d'aliments ferment�s des lactobacilles potentiels qui pourraient �tre utilis�s pour le d�veloppement de nouveaux probiotiques gastro-intestinaux. 55 isolats ont �t� obtenus, dont 46 isolats bact�riens et 9 isolats de levure. Sur la base des propri�t�s morphologiques et biochimiques, 21 ont �t� identifi�s comme �tant des Lactobacillus spp. Des proc�dures syst�matiques ont �t� utilis�es pour �valuer les propri�t�s probiotiques des isolats de Lactobacillus, notamment la fermentation des hydrates de carbone, l'auto-agr�gation, la tol�rance aux acides, la r�sistance � la bile et le test de tol�rance � la pancr�atine. 85% des Lactobacillus spp. examin�es ont montr� la capacit� de former des auto-agr�gats, 75% peuvent r�sister � la bile tandis que toutes les souches ont �t� capables de tol�rer la pancr�atine.
