Find calm and empowerment in the kitchen by breaking it down into 6 different regions: the pantry, the cabinets, the bin, the refrigerator, the freezer and the homegrown haven. This book is your map to each area; in each discover how to make incredibly delicious vegan staples and take back ownership of what you eat.
• Build an entirely vegan pantry as a foundation for nutritious cooking with homemade staples like flours, condiments and spice mixes.
• Organize your cabinets for efficiency and ease, creating shelf-stable ingredients like super granola, activated nut butters and nutritious instant soups and risotto.
• Embrace zero-waste philosophy with creative uses for leftovers like date seed coffee, apple cider vinegar and zero-waste ketchup or carrot muffins.
• Stock your fridge with all your homemade dairy-free essentials, plant based proteins, juices and probiotics.
• Fill your freezer with incredible homemade and healthy instant meals like anytime pizza, instant tagliatelle and incredible ice creams.
• Establish an organic garden anywhere, even on a balcony or windowsill, and make the most of your produce with recipes like Mensch Chef famous pesto, nasturtium jelly, and chard and fennel kimchi.
With The Mindful Kitchen Map as your blueprint, you can be sure you are eating food that positively impacts the planet, your mental health and your wallet, navigating the kitchen in a way that feels intuitive, freeing, and uniquely yours.
