From the Author:
For over forty years, I have been a professional caterer and have directed multi-million dollar operations.
For over twenty years I have taught catering courses to thousands of students at the prestigious Culinary Institute of America in Hyde Park, New York.
Many of my students have become the most successful caterers in the United States.
I have lectured many professional groups and done consulting for a number of caterers and have helped them solve their operational difficulties.
Catering can be a very lucrative career if done correctly. That is why I wrote this book - to help both professional caterers and students alike to better understand how to plan, organize, direct and control their catering businesses from beginning to end. and to help them avoid the many problems and pitfalls that I have identified through my many years as a caterer.
My book is used as a reference by professional caterers and as a practical text for culinary institutions and teachers.
It contains a vast amount of practical information and will answer all questions; especially those addressed to specific situations.
As an added bonus and incentive to use my book, I will respond to questions by e-mail regarding any questions regarding catering or my book at my email address, Mketterer@hotmail.com.
